Just gotta get out there an practice then :)
I try to not do exposures over 2 minutes. I usually have my ISO anywhere between 200-800 depending on how dark it is.
You should invest in a Vello Shutterboss from B&H Photo... it's 100 USD but it's well worth it :D

I think i keep picking the wrong spots to do it, what spots do you find ideal for it? I have a remote for the camera now. Also i find when it is pitch black I have been using a torch for the camera to focus and then once it takes the photo i turn off the torch. Is that how you do it?

Nope, but you can definitely use the torch to set your focus... Afterwards lock in your focus by setting it to manual focus.
Then it's just a matter of taking an hour or two or three of images... usually 1-2 minutes long each.
Ideally you want to point your camera north. If you point towards the north star you get the circle of stars in the trail, if you point due south you get diverging half circles.
Last, find an object of interest for the foreground... a tree, a road, the ocean, a lake with mountains an old building/castle... something to make the shot more interesting...
